~Roasted Eggplant~
Also known as Baigan Choka in Trinidad and Guyana. This roasted mashed eggplant is one of my favourite eggplant dishes. It is loaded with garlic and other fresh seasonings and roasted on an open flame to give the dish it’s signature Smokey flavour.

Then, the roasted eggplant flesh is carefully collected and mashed. It is then sautéed in coconut oil along with tomatoes, onion, garlic and chives i. This delicious mashed eggplant dish can be enjoyed with roti or any flatbread.

Roasted Eggplant (Baigan Choka) with Paratha Roti

This is a simple, delicious, and flavourful dish that's best served with paratha roti or any kind of flatbread.

Ingredients

  • 2 medium Eggplants
  • 1 head Garlic (for stuffing the eggplant)
  • 1 medium Tomato (diced)
  • 1 medium Onion (chopped)
  • 2 cloves Garlic (chopped)
  • 3 leaves Basil
  • 2 tbsp Coconut Oil
  • Salt and Pepper

Instructions

  • Wash eggplant and make slits in it with a knife
  • Peel garlic gloves and stick it into the slits made in the eggplant
  • Roast over an open flame (e.g, a gas cooker), on both sides, until soft.
  • Once the eggplant is done roasting, slit down the center and remove the insides into a mixing bowl. Mash with a fork to loosen eggplant. Set aside.
  • Pour oil in a frying pan. Add onions, garlic, tomatoes, basil and saute in oil. Add mashed eggplant and mix well
  • Add salt and pepper to taste
  • Garnish with cilantro or parsley and serve.

Notes

Enjoy with pita bread, paratha roti, or bakes!

This Vegan Omelette is gluten-free, soy-free, easy to make, budget friendly and totally plant-based! I used chickpea flour for the eggfree omelette batter and black salt to give it the egg taste.

Being on a plant-based diet does not mean that you have to deprive yourself of things that you used to love, it just means that you have to find creative ways to your favorites using alternative ingredients.

Vegan Chickpea Omelette topped with Parsley for added beauty and flavor.

Ingredients

Eggless Egg

  • 1/4 cup Chickpea Flour
  • 1 tbsp Nutritional Yeast
  • 1/4 tsp Black Salt
  • 1/3 cup Water

For the Omelette

  • 1/4 cup Diced Veggies onions, sweet peppers, mushrooms, (any veggies of your choice)
  • 1 tbsp Coconut Oil
  • 2 tbsp Vegan Cheese shredded
  • 1 tsp Fresh Parsley for topping and additional flavor

Instructions

  • Mix all the ingredients for the eggless omelette together, stir until smooth with no lumps and set aside
  • Add oil to a non-stick frying pan and saute the veggies on medium-low for about 3-5 minutes until they become tender.
  • Remove the veggies and add them to the eggless omelette batter and stir to incorporate into the mixture
  • On a low heat, pour the batter in the pan and cook for about 5 minutes until the top of the omelette no longer looks wet.
  • Flip the omelette to the other side and cook for 3-5 more minutes until it is no longer soft in the middle.
  • Top with cheese and fold over so that the cheese is in the middle.

Notes

  • Make sure to use a well-oiled pan to avoid sticking.
  • You can cover the frying pan with a lid for a minute or 2 while cooking to help it cook more evenly.

~Vegan French Toast~
This Vegan French Toast is super easy to make and so much like the original. I used vanilla cashew milk, ground flaxseed (to replace the egg) cinnamon, nutmeg, coconut oil and maple syrup.

French Toast is one of my favourite go-to for breakfast and I definitely wanted to try a Vegan version of it.

This french toast is so close, or maybe better than the original version that you will be surprised that it does not have any eggs.

Once done, dress up your french toast with whatever toppings you like. I added frozen berries, coconut flakes and maple syrup, lots of maple syrup!

Ingredients

  • 1/2 cup Cashew Milk I used vanilla flavoured
  • 1 tbsp Ground Flaxseed
  • 1/4 tsp Cinnamon
  • 1 dash Nutmeg
  • 1/4 tsp Essence
  • 2 slices Bread Thickly cut
  • Oil for Pan

Instructions

  • Mix all ingredients except the bread in a large, shallow dish or plate. Let sit for 5 minutes so the flaxseed can thicken.
  • Place frying pan over medium heat and grease with 2 tsp coconut oil.
  • Dip each slice of bread in the batter for about 20 seconds on each side, so that the bread is evenly covered.
  • Place bread in frying pan and cook until golden brown on the underside. Flip and cook until the other side is golden brown as well. Cooking process takes about 3 to four minis
  • Once done, top with desired toppings such as syrup, fruit, and coconut flakes and ENJOY!!

It is best to use a bread loaf that you can cut to the desired size for your french toast.

Ingredients

  • 1 Mango (ripe, julie mango recommended, peeled and thinly sliced)
  • 1/4 Red Onion (thinly sliced)
  • 1 stalk Fresh Cilantro (roughly chopped)
  • 1 Pinch Salt
  • 1 tsp Sugar
  • 1 tsp Vegetable Oil (or other neutral tasting oil)
  • 1 squeeze Lemon or Lime Juice

Instructions

  • Combine all of the ingredients in a large bowl and use/serve immediately.

Notes

  1. I recommend that you prepare this salad when you're ready to serve it. You can prepare the mango, cilantro and onion in a bowl ahead of time, but only combine the remaining ingredients when you're ready to use the salad.
  2. You can add a dash of pepper sauce to the salad if you wish to create a spicy, sweet, zesty salad

~Crispy Fried Tofu~
Delicious crispy strips that look like fish. However, I couldn’t decide if it tasted like fish or chicken.

It’s best to use firm or extra-firm tofu for deep-frying, not the soft silken tofu. Firm tofu will hold its shape and brown better when fried.

You can enjoy deep-fried tofu as its own course, served with a dipping sauce. It can also be added to recipes for stir-fries, noodles, pasta, or salads as a vegan protein.

I served my crispy fried tofu with a mango salad and it was very delicious.

Serve with sauce of your choice. I used ketchup.

  • 1/2 pack Firm Tofu cut into strips

Seasoning Rub

  • 2 tbsp Bajan Green Seasoning
  • 1/2 tsp Paprika
  • 1/2 tsp Rosemary
  • 1/2 tsp Ginger Powder
  • 1/2 tsp Basil
  • 1/2 tsp Black Pepper
  • 1/2 tsp Pink Himalayan Salt
  • 1/2 tsp Five Spice Powder
  • 1 tsp Mrs. Dash Garlic & Herb Seasoning
  • Pepper To Taste

For Frying

  • 1/4 cup All Purpose Flour or flour of your choice
  • 1/2 cup Cooking Oil of your choice

Instructions

  • Cut Tofu into strips and set aside to season
  • Add Seasoning Rub to the tofu and combine until evenly coated
  • Preheat Cooking Oil
  • Coat with tofu Flour
  • Deep Fry in Cooking Oil
  • Serve and Enjoy!

You can serve with any of several dipping sauces. Consider soy-ginger dressing, sweet and sour sauce, or a combo of ketchup BBQ Sauce.
