Eggless Egg

Chickpea Flour

Nutritional Yeast

Black Salt

For the Omelette
1/4
cup
Diced Veggies
onions, sweet peppers, mushrooms, (any veggies of your choice)

tbsp
Coconut Oil
2
tbsp
Vegan Cheese
shredded

tsp
Fresh Parsley
for topping and additional flavor
Instructions
Mix all the ingredients for the eggless omelette together, stir until smooth with no lumps and set aside
Add oil to a non-stick frying pan and saute the veggies on medium-low for about 3-5 minutes until they become tender.
Remove the veggies and add them to the eggless omelette batter and stir to incorporate into the mixture
On a low heat, pour the batter in the pan and cook for about 5 minutes until the top of the omelette no longer looks wet.
Flip the omelette to the other side and cook for 3-5 more minutes until it is no longer soft in the middle.
Top with cheese and fold over so that the cheese is in the middle.
Notes
Make sure to use a well-oiled pan to avoid sticking.
You can cover the frying pan with a lid for a minute or 2 while cooking to help it cook more evenly.
